Pecorino aged in the ancient way

Certainly one of our most famous pecorino that is produced all over the year with pasteurized sheep's milk. La Pecora is aging four month in mountain area, resting on traditional spruce wooden planks. The thin brown rind hides a friable, lightly straw yellow texture.
Its unique soft taste with a delicate flavor of hazelnuts makes the cheese unforgettable. Serve it as antipasti with some Tuscan cured meat accompanied with nuts, honey and jam. Otherwise savor it on a spring day picnic with a fresh beer.
The most seasoned cheese lovers enjoy this cheese to the full with a glass of full-bodied red wine that bring out its best qualities.
