The thin and dry rind hides a white texture, friable, lightly straw yellow with the typical nut flavor of aged cheeses.
Traditionally its recommended to savor it with fig jam or chestnut honey to bring out its best characteristics.
Enjoy it with a glass of full-bodied red wine.
