One of our most classic cheeses, simple but fascinating. Made from a blend of sheep's and cow's milk it develops a delicate freshness and a perfect balance between texture and taste. The thin rind keeps a white interior with tiny eyes and a mild aroma of milk with hints of spring-like herbs.

 

Il Campagnolo is used as table cheese, perfect grilled, crumbled or melted over pasta or as addition in a rich salad. Enjoy it also as snack with some fresh fruit and a sparkling white wine.
